Avocado Pasta

6 oz spaghetti
1 ripe avocado
1/2 cup cherry tomatoes, halved
1/4 cup corn kernels
1/4 cup fresh basil leaves
1 clove garlic
1/4 cup olive oil
1 tbsp lemon juice
Salt and pepper, to taste


1. Cook pasta according to package instructions, drain well, keep aside.
2. Combine avocados, basil, garlic and lemon juice in a food processor, add salt and pepper.
3. Add olive oil in a slow stream until emulsified.
4. Combine pasta, avocado sauce, cherry tomatoes and corn.
5. Serve hot
